Fresh / Dry Yeast Packaging

It is possible to group yeasts under 3 main groups. These can be named as wet, active dry yeast and instant yeast. Different yeast varieties need different packaging due to the expected properties. For instance since the fresh yeast must be preserved in a moist structure, paper-derived packaging materials keep the moisture on the fresh yeast and prevent the yeast from cracking. Active dry and instant yeasts are stored in multi-layered structures with barrier properties to increase their shelf life.
